  • 500 ml. kefir;
  • 600 gr. flour;
  • 1 tsp baking powder;
  • 5 eggs;
  • 1 tbsp. Sahara;
  • a pinch of salt;

Preparation:

  1. Sift the flour. Form a slide out of it, make a depression in the center.
  2. Pour salt, baking powder, sugar, 1 egg into the hole. Knead the dough, gradually pouring in kefir.
  3. When the batch is ready, leave the dough to rest for 20 minutes.

It doesn’t need to rest, after kneading it’s enough to lie down for half an hour and you can make pies. The dough is universal, very successful, suitable for sweet and savory fillings.

There are two basic rules in preparing fried pies according to this recipe: do not fill the dough with flour, make it soft and pliable. And add more filling, taking into account that the green onions will lose volume. Then the pies will turn out very tasty!

To prepare fried pies with onions and eggs you will need:

  • low-fat kefir – 1 glass;
  • egg – 1 piece;
  • sugar – 1 tbsp. l;
  • table salt – 1 tsp. without slide;
  • soda – 1 tsp;
  • sunflower oil – 1 tbsp. l. + 0.5 cups for frying;
  • flour - approximately 400 g.

For the filling:

  • green onions - 4 large bunches;
  • eggs – 5 pcs;

Break an egg into a bowl, add salt and sugar. Whisk until smooth.

Pour slightly warmed kefir into another larger container and add sunflower oil. I stir until the oily streaks disappear.

I add a teaspoon of baking soda. It can be quenched with kefir, but if you are hypersensitive to a specific soda taste, quench it with vinegar and then mix with kefir.

After adding soda, kefir will begin to foam and bubble strongly. I leave it for a minute to let the reaction finish.

I combine the egg mixture with kefir. I stir quickly.

I add flour in portions. In the first dose, you can add two-thirds of the specified amount. Then add a little, this way it is easier to achieve the desired consistency of the dough.

Mix flour with liquid ingredients. At this point the dough will be loose, lumpy and a little sticky when kneaded.

I add a little more flour and start kneading with my hands. At first the dough is sticky, but you need to add flour in doses so as not to “clog” it, and lubricate your hands with oil.

A well-kneaded dough will be as soft and smooth as an earlobe. It feels homogeneous, elastic, plastic. Cover with film and let sit for half an hour.

I untie the bunches of green onions and wash them under cold water. I sprinkle it on a towel, roll it up and squeeze it lightly. I collect them into bunches again and cut the onion feathers into rings.

I boil eggs hard. Let it cool in very cold water. I cut into medium size cubes.

Pour onions and eggs into a bowl, season to taste with salt and black pepper. Be sure to taste the filling, it should be a little salty.

To prevent the onion from crumbling, add a couple of tablespoons of oil. I added sunflower, you can melt the butter.

I mix everything well. After adding oil, the filling becomes viscous and will not spill out when forming the pies.

I dust the board with flour. I lubricate my palms with oil. I divide the dough into 10-12 pieces of equal size.

I roll rounded pieces. I will stuff a few pieces and cover the rest so that the top does not get too dry.

I knead it into a flat cake, making the edges thinner and the middle thicker. I put a couple of spoons of filling in the middle. The edges remain free.

I bring the edges of the flatbread together over the filling, starting from the center. First I walk in one direction and make a scallop.

Then do the same to the other. You will get an even seam, tightly pinched without open areas. I tuck the comb inward.

I turn them seam side down and give the pies a neat shape. I form the rest of the blanks in the same way.

Immediately after shaping, the pies need to be fried. Pour 1.5-2 cm of oil into the frying pan. Heat it over medium heat. I lay out several pies, leaving free space between them. Fry on one side for 4-5 minutes until the crust is evenly thin.

The second side is fried the same amount or a little faster. You can place the pies on their sides so that all sides are golden brown.

As soon as they are browned, I lift the pies with a spatula and remove them to a plate lined with napkins.

Well, fried pies stuffed with green onions and eggs are ready! It remains to be consumed with tea, broth or under a plate of hot soup.
